Chicken Souk el Attarine
This tomato based stewed chicken dish is perfect over rice or our smoked vegetable quinoa. Inspired by the famous Souk el Attarine spice market in Marrakesh, this is a simple dish with complex flavours that will impress family and friends.

Ingredients
- 4 chicken thighs
- 1 white onion, sliced
- 4 tomatoes, deseeded and sliced
- 1 red chilli
- 4 garlic cloves, minced
- 1 tsp Marrakesh Blend
- 1 tbsp tomato puree
- coriander
- 1 ½ tsp Salt
- 1 ½ cups water

Method

Into a pot, add oil and brown the chicken until the skin is golden brown.

Remove chicken from the pan and add onions. Stir until slightly softened.

To onions, add Marrakesh Blend, garlic and tomato puree. Stir until onions are coated in spices.

Add tomatoes, chilli and stir.

Add 1 cup of water and salt stirring and adding chicken.

Cover and cook on low for 40 minutes stirring occasionally or until thighs are cooked through.

Garnish with fresh coriander.
